Bon Appétit MEAT
RECIPE NAME:  BEEF AND POTATO CASSEROLE

PREPARATION TIME: 55 minutes
 INGREDIENTS:
1 1/2 pounds beef ground
1 tablespoon shortening -
1 cup onion chopped
1 clove garlic finely minced
1 tablespoon flour -
- - potatoes -
1 teaspoon salt -
1 teaspoon sugar -
1 teaspoon basil -
1/4 teaspoon pepper -
1/4 teaspoon oregano -
2 8oz cans tomato sauce -
1 4oz can  mushrooms sliced/undrained
4 cups mushrooms raw, thinly sliced
1 cup water -
1/2 teaspoon salt -
1 cup swiss cheese shredded
 
DIRECTIONS:
  •  Cook beef in shortening until lightly browned.
  • Add onion and garlic, cook until onion is tender.
  • Stir in flour, salt, sugar, basil, pepper and oregano.
  • Mix well.
  • Add tomato sauce and mushrooms, stir.
  • Simmer to thicken and blend flavors (about 15 minutes).
  • Cook potatoes in water with the 1/2 teaspoon salt until they are partially cooked.
  • Drain. Layer 1/2 of the potatoes, meat sauce, and cheese into shallow 2 quart casserole dish.
  • Repeat to use remaining ingredients.
  • Bake in moderate oven until potatoes are tender (about 30 to 35 minutes).
