Bon Appétit BREADS & MUFFINS
RECIPE NAME:  BANANA NUT BREAD

SERVING SIZE: 2 breads
PREPARATION TIME: 1 hour 20 minutes
 INGREDIENTS:
4 cups flour -
4 teaspoons baking powder  -
1/2 teaspoon  baking soda -
1 teaspoon salt -
2/3 cup shortening -
1 1/3 cups sugar -
4 - eggs beaten
3 cups bananas mashed - very ripe
1 cup pecans or walnuts chopped
 
DIRECTIONS:
  •  Sift together first 4 ingredients.
  • Cream shortening and sugar.
  • Add eggs and beat thoroughly.
  • Alternate dry mixture and mashed bananas and nuts, into egg mixture.
  • Final mix will be quite stiff, unless the bananas used are very ripe.
  • Place in two greased loaf pans and bake 1 hour 10 minutes at 350F or until done when tested with a toothpick or knife.
Notes: Freezes well. You can half the recipe.
