RECIPE NAME:  LEMON TEA LOAF

PREPARATION TIME: 1 hour
 INGREDIENTS:
1/2 cup granulated sugar -
1/4 cup soft margarine -
1 - egg -
2 tablespoons low-fat yogurt -
1/2 cup milk -
1 1/2 cups flour -
1 teaspoon baking powder -
1/4 cup granulated sugar -
1 - lemon grated rind
1 - lemon juice
 
DIRECTIONS:
  • Use a 8 x 4 inches loaf pan. Spray with Pam.
  • Cream 1/2 cup sugar and margarine.
  • Beat in egg and yogurt.  Beat in milk.
  • Mix flour and baking powder. Beat into egg mixture until blended.
  • Stir in lemon rind.
  • Spoon into prepared pan.
  • Bake in 350F oven over 1 hour or until cake is done.
  • Let cake stand in pan for 2 to 3  minutes.
  • Remove cake from pan and place on a plate.
  • GLAZE:  In a small bowl, combine lemon juice and 1/4 cup sugar, mixing well. Pour over top of warm cake.
Notes: Very easy recipe, you can't miss!
