RECIPE NAME:  ZUCCHINI BREAD

SERVING SIZE: 2 loafs
PREPARATION TIME: 1 hour 20 minutes
 INGREDIENTS:
3 - eggs -
1 2/3 cups sugar -
1 cup oil -
1 1/2 teaspoons vanilla extract -
3 cups flour -
1 teaspoon baking powder double acting if possible
1 teaspoon baking soda -
1 teaspoon salt -
1 teaspoon ground nutmeg -
2 teaspoons cinnamon -
3/4 cup nuts chopped
2 cups zucchini coarsely shredded
1 cup seedless raisins -
 
DIRECTIONS:
  •  Beat eggs until light.
  • Thoroughly beat in next three ingredients.
  • Sift dry ingredients together.
  • Add to egg-oil-sugar mixture and beat until smooth.
  • When well blended, stir in remaining ingredients.
  • Place batter in two buttered and floured loaf pans (8 1/2 " x 4 1/4").
  • Bake at 350F for one hour.
