DIRECTIONS:

Assemble all ingredients.

Heat oil and salt in skillet with cover.

When very hot, add chicken and sauté for 3 minutes.

Add soy sauce and mix well.

Add next 3 ingredients, then add 1 cup of boiling water, mixing well.

Cover and cook about 4 minutes.

Blend cornstarch with 1/4 cup cold water and stir into mixture.

Cook, stirring gently, until thick and clear.

Put in serving dish and sprinkle with almonds.
