RECIPE NAME:  DICED CHICKEN WITH ALMONDS
RECIPE BY: BON APPETIT!
SERVING SIZE: 4 servings
PREPARATION TIME: 30 minutes
 INGREDIENTS:
2 tablespoons vegetable oil -
1 teaspoon salt -
2 cups raw chicken diced
2 tablespoons soy sauce -
1 cup peas cooked
1 cup celery diced
1/2 cup sliced mushrooms canned
1 cup boiling water -
1 teaspoon cornstarch -
1/4 cup cold water -
1/2 cup almonds chopped/toasted
 
DIRECTIONS:
  •  Assemble all ingredients.
  • Heat oil and salt in skillet with cover.
  • When very hot, add chicken and sauté for 3 minutes.
  • Add soy sauce and mix well.
  • Add next 3 ingredients, then add 1 cup of boiling water, mixing well.
  • Cover and cook about 4 minutes.
  • Blend cornstarch with 1/4 cup cold water and stir into mixture.
  • Cook, stirring gently, until thick and clear.
  • Put in serving dish and sprinkle with almonds.
