RECIPE NAME:  COCONUT & RASPBERRY COOKIES

 INGREDIENTS:
2 - eggs -
3/4 cup sugar -
1 cup butter softened
3 cups flour -
1 teaspoon baking soda -
1/2 teaspoon salt -
1/2 cup water -
1 teaspoon almond extract -
2 cups coconut -
- - raspberry jam -
 
DIRECTIONS:
  • Preheat oven at 350F.
  • In a small bowl, mix together the flour, baking soda and salt.
  • In a large bowl, beat together the eggs and sugar.
  • Add butter softened and beat until well mixed.
  • Add the flour mixture to the preparation in the large bowl.
  • Add the water and almond extract to moist the preparation.
  • When well mixed, add coconut.
  • Drop 1 teaspoon of mixture on cookie sheet (2  inches apart) and give it a ball shape.
  • Make a little hole in the centre of the ball and put some raspberry jam.
  • Bake 10 minutes or until golden all around.
