RECIPE NAME:  HAWAIIN SPONGE CAKE

SERVING SIZE: 1 cake
PREPARATION TIME: 1 hour
INGREDIENTS:
2 cups flour -
1 1/2 cups sugar -
1 teaspoon baking soda -
1/4 teaspoon salt -
1 20 ounces can crushed pineapple -
2 - eggs slightly beaten

3/4 cup sugar -(for the frosting)
3/4 cup carnation milk -(for the frosting)
1/2 cup butter or margarine -(for the frosting)
1 teaspoon vanilla -(for the frosting)
1/2 cup flaked coconut -(for the frosting)
 
DIRECTIONS:
  •  In a large bowl combine flour, sugar, soda and salt.
  • Add undrained pineapple and eggs.
  • Mix well. Pour batter into a greased 13 X 9 pan.
  • Bake at 350F for 30 minutes or until done. Cool in the pan for 10 minutes.
  • For the frosting: Mix all ingredients - boil about 7 minutes.
  • Stir until it thickens.
  • Stir in 1/2 cup of flaked coconut. Pour over cake.
