RECIPE NAME:  JANICE'S LEMON COOKIES

PREPARATION TIME: 1 hour 30 minutes
 INGREDIENTS:
3/4 cup butter -
1/3 cup cream cheese -
3/4 cup white sugar -
1 - egg -
1 tablespoon lemon rind grated
1 tablespoon lemon juice -
1/2 teaspoon salt -
1 teaspoon baking powder -
LEMON GLAZE
2 tablespoons lemon juice -
1 cup icing sugar -
 
DIRECTIONS:
  •  Cream butter, cream cheese, & sugar till fluffy.
  • Beat in egg, rind, & juice.
  • Mix dry ingredients together and mix into butter mixture.
  • Refrigerate one hour.
  • Roll dough into 1 inch balls & place on unbuttered sheet 1 inch apart.
  • Bake at 375F  -  12 to 15 minutes, until slightly golden.
  • Cool on rack, then glaze. 
  • GLAZE
  • Mix lemon juice & icing sugar then ice or dip cookies into glaze. (Dipping is faster)
Notes:  These cookies freeze well.
             Not at all fattening and quite delicious!
