RECIPE NAME:  HOLIDAY RING CAKE

PREPARATION TIME: 1 hour 40 minutes
 INGREDIENTS:
1 cup butter / margarine -
8 ozs - (approx., 225g) cream cheese -
1 1/2 cups white sugar -
1 teaspoon vanilla -
2 teaspoons lemon rind grated
4 - eggs -
1 1/3 cups flour -
1 1/2 teaspoons baking powder -
1/2 cup raisins seedless
1/2 cup raisins golden
1/2 cup dried fruit  or  candied peel -
- - or  dried apricots/pineapple -
1/2 cup red and green glace cherries -
1/2 cup nuts  (optional) chopped
1/4 cup flour -
 
DIRECTIONS:
  •  Cream butter, cream cheese & sugar till fluffy.
  • Beat in vanilla, lemon rind.
  • Add eggs, beating well between each.
  • Mix flour with baking powder and blend in.
  • Combine fruit and nuts, and toss with 1/4 cup flour to keep dried fruit from sticking together.
  • Stir into batter.
  • Pour into greased and floured 10" Bundt pan.
  • Bake at 300 F  70 to 80 minutes till golden.
  • Cool before removing from pan.
  • GLAZE
  • Glaze with mix of milk & icing sugar, or dust with icing sugar (faster).
Notes: Cake variation:  If desired, any of the dried fruit can be left out of the recipe. The cake can be made without any fruit at all, and is quite lovely!
Glaze variation:  Glaze with lemon juice and icing sugar mix.
