RECIPE NAME:  RUM ROLLS - BALLS

 INGREDIENTS:
1/2 cup butter or margarine -
1 1/2 cups icing sugar -
3/4 cup chocolate chips semi-sweet
2 - eggs slightly beaten
1 teaspoon rum extract -
2 tablespoons water -
1 3/4 cups chocolate waffles crumbs -
- - cake decoration candies -
 
DIRECTIONS:
  • Mix together butter, chocolate chips & icing sugar.
  • Melt at low heat, stirring constantly.
  • Add eggs, mix well until it thickens.
  • Remove from heat, add rum extract, water and chocolate waffle crumbs.
  • Transfer into a large bowl lined with aluminum foil.
  • At this point the mix will look granular, refrigerate a few hours or overnight.
  • To make rolls, divide mix in 3 parts, then form into tubes of about 1 1/2 in. diameter.
  • Spread candy mix in a plate and roll tubes in candy.
  • Wrap rolls until ready to serve, then slice into 1/4 in. thick pieces.
  • If you prefer, you may roll paste into balls
Notes - Comments: If you cannot find waffles crumbs, buy the cookie type used for ice cream cake and crumble in food processor.
