Bon Appétit DESSERTS - COOKIES
RECIPE NAME:  LEMON BARS
RECIPE BY: BON APPETIT!

PREPARATION TIME: -
 INGREDIENTS:
1 cup butter or margarine softened
1/2 cup white sugar -
2 cups all purpose flour -
4 - eggs -
1 1/2 cups white sugar -
4 tablespoons all purpose flour -
2 - lemons -
 
DIRECTIONS:
  • Preheat oven to 350F.
  • To make Crust; Mix softened butter, 2 cups flour and sugar.  Press into the bottom of 9 x 13 inch pan.  Bake 15 - 20 minutes.
  • To make Filling; Whisk together eggs, 1 1/2 cups sugar, 4 tablespoons flour and the juice of 1 1/2 - 2 lemons ( do not use bottled juice). Pour over crust.  Bake 20 minutes.  Firms as it cools. For a festive tray...make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green.  After both pans have cooled, cut into uniform 2 inch squares and decorate in a checker board fashion.
