Bon Appétit SEAFOOD & FISH  -  EGGS  -  APPETIZERS
RECIPE NAME:  EGG CAVIAR

SERVING SIZE: 4 if it is an appetizer
PREPARATION TIME: 30 minutes
 INGREDIENTS:
5 to 6 - eggs hard cooked, cooled and chopped
1 small onion grated or chopped fine
- - salt and pepper to taste
1/2 teaspoon curry -
8 ounces cream cheese room temperature
1 1/2 tablespoons sour cream -
1 tablespoon mayonnaise -
1 bottle (2 oz) red or black caviar -
 
DIRECTIONS:
  •  Combine eggs, onion, mayonnaise and seasonings as for egg salad.
  • Spread first layer in dish.
  • Whip cream cheese and add just enough sour cream so that mixture is the consistency of fluffy icing.
  • Add 1 tablespoon mayonnaise.
  • Spread over egg salad layer.
  • Top with caviar and garnish with parsley.
  • Sprinkle lemon juice on top.
