Bon Appétit JAPANESE CUISINE  -  VEGETABLES  -  POULTRY
RECIPE NAME:  TEMPURA  (with either chicken, seafood and/or vegetables)
RECIPE BY: BON APPETIT! 
SERVING SIZE: Enough for 4 breasts of chicken, 3 carrots and 1 onion
PREPARATION TIME: 45 minutes
 INGREDIENTS:
2 cups flour -
4 tablespoons cornstach -
2 cups ice-water -
2 - egg yolk -
4 - egg white beaten
1 teaspoon salt -
 
DIRECTIONS:
  •  Stir together flour, cornstach and salt.
  • Make a well in center of dry ingredients.
  • Combine ice water and egg yolks, add all at once to dry ingredients.
  • Slowly stir just till moistened (do not overbeat).
  • Fold in egg whites.
  • Do not allow batter to stand too long before using.
  • Dip chicken, or pieces of vegetables (that were cut 1inch, shorter or longer as you prefer) and deep fry.
  • Do not put too many pieces at once otherwise they stick together.
Notes: Prepare Tempura Sauce (see recipe). When you serve your Tempura serve the Tempura Sauce warm as a dip.
