Bon Appétit PICKLES - FRUITS - VEGETABLES
RECIPE NAME:  ONION MANGO CHUTNEY
RECIPE BY: BON APPETIT!
SERVING SIZE: 8 TO 10 cups
PREPARATION TIME: 2 hours
 INGREDIENTS:
1 tablespoon garlic minced
1 tablespoon fennel seed -
1 tablespoon cumin -
1 tablespoon mustard -
1 1/2 cups cider vinegar -
2 cups light brown sugar -
4 cups sugar -
3 tablespoons lime rind grated
1 1/2 cups dark seedless raisins -
1 qt fresh mango cubed
1 qt onions chopped
1 teaspoon salt -
 
DIRECTIONS:
  • Combine all ingredients in large kettle.
  • Bring to boil.
  • Then simmer uncovered until thickened (about 1 1/2 hours) stirring occasionally.
  • Ladle into hot sterilized jar.
  • Process in boiling water bath for 15 minutes if desired.
Notes - Comments: Serve with meats, curried dishes or open faced sandwiches.
