top sirloin

shallots
finely chopped

serrano chiles
finely chopped

cilantro - leave only
finely chopped

egg yolks

tablespoon
olive oil

salt and pepper to taste

teaspoon
lime juice

DIRECTIONS:
Trim the beef of all fat.
Cut beef into 1 inch cubes and place in a food processor or blender. (Do not over process).
Remove from food processor and add the shallots, chiles, cilantro and egg yolks, folding gently.
Season for flavor.
Serve with lime wedges and/or other additions such as tortilla chips...etc....
Notes:
This dish is better and safer when prepared at the last minute.
