Bon Appétit MEAT
RECIPE NAME:         SPICY STEAK TARTAR
RECIPE BY: BON APPETIT!

PREPARATION TIME: 20 minutes
 INGREDIENTS:
1 pound top sirloin very fresh
3 large shallots finely chopped
4 or+ - serrano chiles finely chopped
1 bunch cilantro - leave only finely chopped
2-3 - egg yolks -
1 tablespoon olive oil -
- - salt and pepper to taste -
1 teaspoon lime juice -
 
DIRECTIONS:
  •  Trim the beef of all fat.
  • Cut beef into 1 inch cubes and place in a food processor or blender. (Do not over process).
  • Remove from food processor and add the shallots, chiles, cilantro and egg yolks, folding gently.
  • Season for flavor.
  • Serve with lime wedges and/or other additions such as tortilla chips...etc....
Notes: This dish is better and safer when prepared at the last minute.
