Bon Appétit BREADS AND MUFFINS
RECIPE NAME:  MAPLE WALNUT MUFFINS

PREPARATION TIME:
 INGREDIENTS:
1 cup all purpose flour -
3/4 cup whole wheat flour -
1 tablespoon baking powder -
1 teaspoon salt -
1/4 teaspoon cinnamon -
1/2 cup walnuts chopped (set some aside)
1/2 cup butter -
1/3 cup maple syrup -
2/3 cup milk -
1 - egg -
1/2 teaspoon vanilla or maple extract -
 
DIRECTIONS:
  • Preheat oven to 425F.
  • Grease 12 regular muffin cups
  • In a large mixing bowl, combine all dry ingredients except nuts.
  • Melt butter over low heat.
  • Add maple syrup and mil to butter and stir.
  • Beat in egg and vanilla (or maple) flavoring.
  • Stir butter mixture into dry ingredients.
  • When liquid and dry ingredients are well blended, stir in walnuts.
  • Spoon batter evenly into muffin cups, leaving room in each one for topping.  If topping not used, bake immediately.
  • If topping is to be used combine: 3 tablespoons sugar, 1/4 teaspoon cinnamon, 3 tablespoons finely chopped walnuts.
  • Blend topping ingredients well and sprinkle over each uncooked muffin.
  • Bake in preheated oven for 15 to 20 minutes.
  • After removing allow to stand at least 5 minutes before removing muffins from cups.
Notes - Comments: The artificial flavoring can be increased if desired.  Do not increase the maple syrup or you will upset the liquid balance of this recipe.
