Bon Appétit PASTAS - MAIN COURSE
RECIPE NAME:  MARILYN'S MACARONI CASSEROLE

 INGREDIENTS:
1 cup onion chopped
2 1/2 tablespoons bacon fat divided
1 lb ground beef -
- - salt - pepper to taste
28 oz can diced tomatoes -
2 to 3 teaspoons chili powder -
12  oz large elbow macaroni -
3 cups medium cheddar yellow - shredded
 
DIRECTIONS:
  • Fry onion in half of the bacon fat until golden.
  • Add the ground beef and brown.
  • Add salt, pepper, chili powder and the undrained can of tomatoes.
  • Let simmer for about 8 minutes.
  • Cook pasta.
  • Grease a round 2.5 to 3 qt. casserole (I use a 3 qt. Dutch oven) with he remaining bacon fat.
  • Add a layer of pasta, a layer of meat sauce and a layer of cheese.
  • Repeat with plenty of cheese on the top.
  • Bake for 30 minutes at 350F.
  • I serve with a garden salad. To reheat, mash the remaining pasta into an even layer.
  • (I add additional cheese at this point).
  • If the pasta looks dry, add 1 tablespoon of water to the casserole.
  • Cover and heat at 350F for about 20 to 30 minutes.
Notes - Comments: This is a simple dish that has been a family comfort food for many years.
