RECIPE NAME:  Yolande's Vegetarian Spaghetti Sauce

SERVING SIZE: 6 servings
PREPARATION TIME: 2 1/2 hours
 INGREDIENTS:
3 - cloves of garlic minced
1 medium zuchinni chopped
1 - red pepper chopped
1 - green pepper (optional) chopped
1/4 - cauliflower chopped
1/2 - brocoli chopped
1/2 box fresh mushrooms minced
1 large onion chopped
2 large celery branches -
1 teaspoon oregano (use fresh herbs if you can) -
2 teaspoons basilic -
1/2 teaspoon thyme -
1/2 cup red wine (optional)
- - salt and pepper to taste -
- - tabasco sauce to taste -
2 28 ounces cans diced tomatoes -
1 1 liter V8 -
 
DIRECTIONS
 
  • In a large pot  toss all the vegetables over medium heat in olive oil.
  • Add the rest of the ingredients and simmer for a good 2 hours.
 
Notes:  You can easily replace and/or add other vegetables to your liking.
