Bon Appétit PIZZAS  -  APPETIZERS - SEAFOOD
RECIPE NAME:  SMOKED SALMON PIZZA with TEMPURA ONION RINGS

PREPARATION TIME: -
 INGREDIENTS:
- - DOUGH -
1 cup water warm
1 teaspoon granulated sugar -
1 teaspoon dry yeast active
2 cups all purpose flour -
1 tablespoon whole fennel seeds -
2 tablespoons olive oil -
2 tablespoons yellow corn meal -
1/2 teaspoon salt -
1/2 tablespoon parmesan cheese grated
- - TOPPINGS -
4 oz. cream cheese softened
8 oz. smoked salmon thinly sliced
1 oz. caviar -
- - Tempura onion rings -
1 tablespoon chives minced
- - TEMPURA ONION RINGS -
1 small onion sliced into rings
1/2 cup buttermilk -
1/2 cup all purpose flour -
1/2 teaspoon salt -
1/4 teaspoon freshly ground pepper -
- - oil as needed for deep frying -
 
DIRECTIONS:
  • To prepare the DOUGH, measure warm water into mixing bowl.  Stir in sugar, sprinkle on yeast.
  • Let puff for seven or eight minutes.
  • With a dough hook, beat in flour to create a soft dough.
  • Add fennel, one tablespoon olive oil, corn meal and salt.
  • Continue to mixi four or five minutes.
  • Cover with a damp kitchen towel.
  • Let rest for one hour.
  • Preheat oven to 400F.
  • Roll to fit 12 inch pizza pan.
  • Brush on remaining olive oil and sprinkle with parmesan.
  • Bake for 15 minutes or until golden brown.
  • To serve, spread baked crust with softened cream cheese, arrange salmon on top, dot with caviar, heap on onion rings, and sprinkle with chives.
  • TEMPURA ONION RINGS
  • To prepare onion, place rings in shallow pan.
  • Cover with buttermilk.
  • Let stand for one to two hours.
  • Preheat oil to 350F.
  • Combine flour, salt and pepper.
  • Remove onion rings from buttermilk with a fork, dip in seasoned flour, shaking off excess, deep fry until crisp and golden.
  • Drain on toweling and either serve immediately as a snack or use as a topping on Smoked Salmon Pizza.
