millet or couscous
cooked, cooled

cup
onion
minced

cups
parsley
finely chopped

cup
mint leaves
chopped
1/2
cup
lemon juice

1/2
cup
olive oil

teaspons
gomasio
-
-
-
lettuce
-
-
-
salt, pepper and herbs
to taste
DIRECTIONS:
Cut the tomatoes in half, crosswise. Gently squeeze out seeds.
Chop the tomatoes fine and set aside to drain.
Toss the millet with the other ingredients except the lettuce.
Just before serving, drain excesss juice from tomatoes and add them to the salad.
Toss gently add taste.
Adjust seasoning if necessary.
Serve on a bed of lettuce.
