Bon Appétit SALADS  -  VEGETARIAN DISHES  -  CEREALS & BEANS
RECIPE NAME:  TABBOULEH SALAD

SERVING SIZE: 4 servings +
PREPARATION TIME: 1 hour
 INGREDIENTS:
4 - tomatoes -
2 cups millet or couscous cooked, cooled
1/2  cup onion minced
2 cups parsley finely chopped
1 cup mint leaves chopped
1/2 cup lemon juice -
1/2 cup olive oil -
4 teaspons gomasio -
- - lettuce -
- - salt, pepper and herbs  to taste
 
DIRECTIONS:
  •  Cut the tomatoes in half, crosswise. Gently squeeze out seeds.
  • Chop the tomatoes fine and set aside to drain.
  • Toss the millet with the other ingredients except the lettuce.
  • Just before serving, drain excesss juice from tomatoes and add them to the salad.
  • Toss gently add taste.
  • Adjust seasoning if necessary.
  • Serve on a bed of lettuce.
