Bon Appétit SALADS  -  POULTRY
RECIPE NAME:  CHICKEN AND FRUIT SALAD

SERVING SIZE: 6 servings
PREPARATION TIME: 3 hours
 INGREDIENTS:
2 1/2 to 3 cups chicken cooked and diced
1 cup celery  chopped
2 tablespoons  green onion chopped
2 tablespoons capers -
1 teaspoon salt -
2 tablespoons lemon juice -
1 11 ounces can mandarin oranges drained
1 9 ounces can pineapple chunks or tidbits drained
1/2 cup slivered almonds toasted
1/2 cup mayonnaise -
1/2 teaspoon lemon peel grated
- - salad greens -
 
DIRECTIONS: 
  •  Combine chicken, celery, green onion, capers, salt, lemon juice.
  • Cover, chill for several hours.
  • Just before serving. Add the oranges (reserve a few to garnish), pineapple and almonds.
  • Combine mayonnaise and lemon peel. Mix in carefully so as not to break fruit.
  • Spoon into a bowl lined with greens.
  • Garnish with reserved oranges.
Notes: Wonderful summer dish!
