Bon Appétit SALADS  -  CEREALS AND BEANS
RECIPE NAME:  RED BEAN SALAD WITH FETA AND PEPPERS

SERVING SIZE: 6 servings (1 cup each)
PREPARATION TIME: 15 minutes
 INGREDIENTS:
1 can (19oz/540ml) kidney beans -
1 sweet red pepper chopped
2 cups (500ml) cabbage finely chopped
2 green onions chopped
4 oz (125gr) feta cheese cubed (1 cup)
1/4 cup (50ml) fresh parsley chopped
1 clove garlic minced
2 tablespoons (25ml) lemon juice -
1 tablespoon vegetable oil -
 
DIRECTIONS:
  • Drain kidney beans and rinse under cold water.
  • In salad bowl, combine all ingredients, toss to mix.
  • Cover and refrigerate for up to 3 days.
