Bon Appétit SANDWICHES
RECIPE NAME:    CHICKEN AND WALNUT SANDWICH

PREPARATION TIME: 10 minutes
 INGREDIENTS:
1/2 cup fresh spinach finely chopped
2/3 cup nonfat plain yogurt -
1 tablespoon fresh lemon juice -
1 teaspoon dry mustard -
1/4 cup green onion chopped
1 tablespoon fresh dill or tarragon finely chopped
1/2 cup celery finely chopped
3 cups white-meat chicken cooked and diced
1 - apple cored and diced
1/2 cup walnuts chopped
4 - pita breads halved
- - salt, pepper if desired
- - iceberg or other crisp lettuce leaves -
 
DIRECTIONS:
  • In a large bowl combine spinach, yogurt, leamon juice, mustard, green onion, dill or tarragon and celery.
  • Stir to combine.
  • Add chicken, apple and walnuts.
  • Blend well, then season to taste with salt and pepper.
  • Spoon 1/2 cup of salad into each pita half, tuck in a lettuce leaf and serve.
Notes: Like all nuts, walnuts are high in fat but only 12 percent of that fat is saturated. An impressive 70 percent is polyunsaturated, the type of fat from which omega-3s are derived.
