potatoes
peeled and finely chopped

milk
nonfat if you wish

cup
vegetable broth

onion
finely chopped
1/2
teaspoon
celery salt

Mrs. Dash or Nature's Seasonings

cup
sour cream
nonfat if you wish

tablespoons
parsley
chopped
1/4
cup
green onion
chopped
DIRECTIONS:
In a pot, combine potatoes, milk, broth, onion, celery, salt and seasoning.
Bring to a boil.
Lower heat and simmer until potatoes are tender.
Remove from heat.
Take half of the potatoes and broth and puree in a blender until smooth.
Return to the pan and stir in sour cream.
Serve sprinkled with parsley and green onions.
Notes:
If you wish, add chopped veggies.
