Bon Appétit SOUPS
RECIPE NAME:  CREAM OF POTATO SOUP 
RECIPE BY: BON APPETIT!
SERVING SIZE: 4 to 6
PREPARATION TIME: 40 minutes
 INGREDIENTS:
2 large potatoes peeled and finely chopped
3 cups milk nonfat if you wish
1 cup vegetable broth -
1 medium onion finely chopped
1/2 teaspoon celery salt -
1 teaspoon Mrs. Dash or Nature's Seasonings -
1/2 cup sour cream nonfat if you wish
2 tablespoons parsley chopped
1/4 cup green onion chopped
 
DIRECTIONS:
  • In a pot, combine potatoes, milk, broth, onion, celery, salt and seasoning.
  • Bring to a boil.
  • Lower heat and simmer until potatoes are tender.
  • Remove from heat.
  • Take half of the potatoes and broth and puree in a blender until smooth.
  • Return to the pan and stir in sour cream.
  • Serve sprinkled with parsley and green onions.
Notes: If you wish, add chopped veggies.
