Bon Appétit VEGETABLES
RECIPE NAME:  ARTICHOKES WITH  Lemon Butter
RECIPE BY: BON APPETIT!
SERVING SIZE: 6 to 8
PREPARATION TIME: 1 hour
 INGREDIENTS:
6 quarts  water -
2 tablespoons lemon juice -
1 teaspoon salt -
3 or 4 small  artichokes -
- - lemon butter -
 
DIRECTIONS:
  • In large kettle, heat water, lemon juice and salt to boiling.
  • Slice 1 inch off top of each artichoke; discard top.
  • Snip off points of remaining leaves with scissors.
  • Trim stem even with base of artichoke; cut each artichoke lengthwise in half.
  • Place in kettle; heat to boiling.
  • Reduce heat; cover and simmer 30 to 40 minutes.
  • (Artichokes are done when leaves pull off easily and bottom is tender when pierced with knife.)
  • Remove artichokes carefully from water; drain.
  • Serve hot with Lemon Butter.
