DIRECTIONS:

In large kettle, heat water, lemon juice and salt to boiling.

Slice 1 inch off top of each artichoke; discard top.

Snip off points of remaining leaves with scissors.

Trim stem even with base of artichoke; cut each artichoke lengthwise in
half.

Place in kettle; heat to boiling.

Reduce heat; cover and simmer 30 to 40 minutes.

(Artichokes are done when leaves pull off easily and bottom is tender when
pierced with knife.)

Remove artichokes carefully from water; drain.
-
Serve hot with Lemon Butter.
