Bon Appétit MAIN COURSES  -  VEGETARIAN DISHES
RECIPE NAME:  SOYBEAN VEGGIE BURGER

 INGREDIENTS:
- - nonstick cooking spray -
3/4 cup onion finely chopped
3/4 cup carrot finely chopped
1/4 cup red bell pepper finely chopped
4 - cloves garlic minced
1 cup soybeans coarsely pureed cooked
1 1/4 cup basmati rice cooked
1/3 cup seasoned bread crumbs -
3 tablespoons fresh parsley finely chopped
1 - egg beaten
- - Tabasco sauce to taste
- - salt, pepper to taste
 
DIRECTIONS:
  • Coat a medium skillet with nonstick cooking spray, and warm over medium heat until hot.
  • Add onion, carrot, bell pepper and garlic, and saute until tender, about eight minutes.
  • Combine sauteed vegetables, soybeans, rice, bread crumbs and parsley in a bowl, season to taste with Tabasaco sauce, salt and pepper.
  • Mix in egg, blending well, shape mixture into six patties.
  • Preheat oven at 350F. Lightly coat a baking pan with nonstick cooking spray, place burgers in pan and bake for 8 to 10 minutes. Do not turn.
