Ritz Snacktime Treat

8 Fat Free or Low Fat Ritz crackers
2 slices Fat Free cheese (your choice of flavors)
1 apple sliced thin
Or use any fruit of your choosing.

Quarter slices of cheese and place cheese on each Ritz cracker.
Place in microwave for about 45 seconds till cheese has melted.
Top with the sliced apple or fruit of your choice and ENJOY!
Its a great "pick me up" snack!

Low fat apple cobbler

5 Lrg. Granny Smith Apples
1 box spice cake mix
Cinnamon Sugar
1 16 oz. jar unsweetened applesauce
Peel apples and slice 1/4 inch thick.

Arrange in baking pan. Sprinkle generously with cinnamon and a little bit of sugar.
Sprinkle spice cake mix over apples to cover ( may not use whole box).
Spoon evenly the 16 oz. of applesauce. Bake 30 minutes in a 350 degree oven.
Serves approx. 6 .....Very tasty!!

Unbelievable Chocolate Kahula Cake

INGREDIENTS

DIRECTIONS

  1. Preheat oven to 350F.
  2. Coat a 13x9-inch baking pan with nonstick cooking spray and dust with cocoa.
  3. Place all ingredients except chocolate chips in a large bowl. Beat with mixer for 2 minutes or until well blended. Stir in chocolate chips.
  4. Pour batter into prepared pan and bake for 50 minutes, or until toothpick inserted in middle comes out clean. Cool before cutting.
  5. NUTRITIONAL INFORMATION per serving:
    115 cal; 6 g fat; 11g Carb;

Cinnamon Pumpkin Torte

Servings: 24

INGREDIENTS

Non-stick cooking spray

1 (18.25 oz) pkg low-fat yellow cake mix

1/4 cup low-fat margarine, melted

1 egg, slightly beaten (or 1/4 cup egg sutstitute)

1 (30 oz) can pumpkin pie mix (the kind with spices already added to pumpkin)

2 eggs, beaten (or « cup egg substitute)

2/3 cup canned, evaporated skim milk

2 Tbsp sugar

1 tsp cinnamon

DIRECTIONS

Preheat oven to 350F degrees. Coat a 9 x 13-inch cake pan with cooking spray. Set aside « cup of yellow cake mix.

Mix margarine and one egg and add to remaining cake mix. Press slightly dry mixture into bottom of pan to form a crust.

Combine pumpkin pie mix, two remaining eggs, and evaporated skim milk. Pour over prepared bottom crust.

Mix the 1/8 cup reserved cake mix, sugar and cinnamon and sprinkle over pumpkin filling. Bake 45 to 55 minutes, or until filling is set.

Chocolate Sauce Over Fruit

2 very ripe bananas

3 tbsp cocoa powder

1/2 cup plain nonfat yogurt

1/4 cup dry nonfat milk

1 tbsp unsweetened frozen orange-pineapple juice concentrate

Combine all ingredients in blender, and process until creamy. Use as a dip for fresh strawberries, sliced bananas, orange sections or chunks of your favorite fruit.

Serves 8. Per serving: (about 1/8 cup sauce, not counting fruit) 46 calories, 0.2 g fat, and 4 percent of calories from fat

Triple Layer Party Pie

Serves 8 

  • 1- 4 oz Jello sugar-free instant pudding mix - butterscotch 
  • 1 1/3 cups Carnation non-fat dry milk powder 
  • 2 1/2 cups water 
  • 1 6 oz. Keebler chocolate flavored pie crust 
  • 1- 4 oz. Jello sugar-free instant chocolate pudding mix  
  • 1/2 Cup Cool Whip Lite or Fat Free
  • 2 tablespoons (1/2 oz chopped pecans) 
  • 1 tablespoon (1/4 oz) mini chocolate chips

In a medium bowl, combine butterscotch Jello pudding and pie mix, 2/3 cup dry milk powder, 1 1/4 cups water. Mix well using wire whisk. Pour on top of chocolate pie crust. In a medium bowl, (can be the same one) combine chocolate Jello pudding mix, remaining 2/3 cup dry milk powder, 1 1/4 cups water. Mix well with wire whisk. Pour on top of butter- scotch pudding. Refrigerate for 15 minutes. Before serving, cover with Cool Whip Lite, sprinkle with pecans and mini-chocolate chips. Refrigerate until ready to serve.

Chocolate Mocha Cake
 
1 1/2c cake and pastry flour
1 1/2c sugar
1/2c cocoa
1 1/4t baking soda
3/4t baking powder
1/2t salt 3 egg whites
3/4c coffee, cooled
1/2c skim milk
1/3c corn syrup
non stick cooking spray
Frosting:
2/3c corn syrup
1 egg white
3/4t instant coffee
Mix in large bowl sift together flour, sugar, cocoa, baking soda, baking powder and salt. In small bowl, whisk together remaining ingredients to blend well. Add liquids to dry ingredients whisking until smooth. Pour into 9" square pan sprayed with cooking spray. Bake at 350x 35 to 40 minutes. Cool completely then frost.
To make frosting:
Bring syrup to a boil. In small bowl with electric mixer on high speed beat egg whites until soft peaks form. Add coffee powder and very gradually beat in hot syrup. Continue beating until stiff and shiny about 3 minutes. Spread over cooled cake. Makes 16 servings.

SPINACH DIP - 8 TO 10 SERVINGS

3 cups nonfat plain yogurt
2 cups nonfat sour cream
2 cups fresh spinach chopped finely
1 cup scallions chopped finely
2 cloves garlic, minced
1/2 cup parsley, chopped
2 teaspooons dried dill
1.5 teaspoons spike
Salt and Pepper to taste


Combine all ingredients except Salt and Pepper, mix well.
Add salt and pepper. Chill 2 hours before serving.

Summer Guacamole

Although avocados are high in fat, the fat is mostly monounsaturated fat (like that in olive oil)> Monounsaturated fat has been shown to lower total cholesterol levels. Florida avocados have slightly less fat (and calories) than California varieties. 

Here's a lower-calorie version of everyone's favorite dip.  

Ingredients  

1 cup plain nonfat yogurt (or nonfat cottage cheese) 
2 scallions, chopped 
1 Tbsp. lemon juice 
1½ cups mashed Florida avocado 
4 oz. can green chilies, chopped 
1/2 tsp. pepper 
1/2 tsp. chili powder 
1/2 tsp. cumin 
1/2 tsp. garlic 

 
Blend all ingredients; adjust seasonings to taste. Chill before serving. Makes 2 cups. 

PER 2 TBSP. SERVING: 36 calories and 2 grams of fat. 

Note: Burying an avacado pit in guacamole will not help keep it from turning brown; lemon or lime juice must be included in the recipe.

Banana Bread
My fat- and egg-free banana bread may be heavier than most,
but it's delicious just the same.

6 very ripe bananas
1 cup sugar
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla
1 cup golden raisins

Preheat the oven to 350 deg F. Mash the bananas and sugar together. In a separate bowl, mix the flour, baking powder and baking soda. Stir in the banana mixture and the vanilla; when thoroughly blended, add the raisins. Pour into a nonstick loaf pan and bake 1 hour. Cool slightly and remove from the pan; allow to cool completely before slicing.
