Pretty Peach Soup
1 cup fresh or frozen raspberries, thawed
Place raspberries in a blender or food processor and process until smooth. Strain and discard seeds if
desired. Cover and refrigerate puree.
Place peaches (you can even leave the skin on) and lemon juice in food processor and process until
smooth. Add nectar, yogurt, sugar (as needed if fruit is too tart) and extract. Process until yogurt is well
blended.
Cover and refrigerate at least 2 hours. (Actually, you can serve it immediately, but it is best when
thoroughly chilled)
To serve, place servings in separate bowls. Drizzle raspberry puree in a 3 inch circle on top of each
serving. Use a toothpick to draw six lines toward the center of the circle, forming a "flower".
Makes appx. 4 servings. And when prepared with nonfat yogurt, each 1 cup serving is only about 130
calories!
