et’s Awesome Zucchini Casserole
 
 
 
1 cup shredded cheddar cheese 
1 cup ricotta cheese 
6 eggs 
¼ cup fresh basil, minced 
2 cloves garlic, minced 
1 onion, minced 
Salt & black pepper 
2 lb. zucchini, sliced in ¼” rounds 
 
Topping: 
¾ cup breadcrumbs 
¼ cup Parmesan cheese 
¼ cup melted butter 
 
 
 

Preheat oven to 375°.
 
Mix together all ingredients except topping.  Place into a greased pan.
 
Mix breadcrumbs and Parmesan cheese.  Spread over top of casserole and drizzle with
melted butter.
 
Tent with foil.  Bake 25 minutes.  Remove foil & bake until browned (about 20 minutes
additional).
 
Serves 10-12.  Recipe may be halved.
