Sample Recipe
Red Chili
(with or without meat)
2 cups Pinto Beans (dry)
6 cups water
1 can Stewed Tomatoes (15 oz.)
2 tablespoons Chili Powder
2 large Green Chili Peppers (an 8 oz. can of Green Chilies-diced, can be substituted)
3 Jalapeno Peppers (a 4 oz. can of Jalapenos-diced, can be substituted)
1 teaspoon Garlic Powder
¼-½ teaspoon of Cayenne Pepper (to taste)
2 tablespoons Corn Starch
1 large Onion
(optional)------- 1 lb. Chopped Beef
Wash the Pinto beans in a strainer in the sink, with cold water. While they are washing, put 6 cups of cold water into a 3 quart crock pot. When the beans are washed (about 5 minutes under running water), add them to the crock pot. Let the beans soak overnight- no heat-the crock pot turned off. Now place a large mixing bowl on a table, and add the stewed tomatoes-one by one, crushing each one into the bowl individually, into the mixing bowl. Then add the juice from the can to the bowl also. Next, add the chili powder and garlic powder. Dice the Green Chilies, Onion, and Jalapenos, then add them to the bowl. Add the Cayenne pepper to the bowl. Stir the contents of the bowl thoroughly, cover, and let stand in the refrigerator overnight.
THE NEXT DAY
Turn the crock pot on, and set it on "high". (if you are going to add meat)- Brown the beef in a skillet on the stove. While the beef is browning, remove the bowl of other ingredients from the refrigerator, and pour the contents into the crock pot. Stir the contents of the pot for approx. 1 minute. After the beef is browned, drain off the fat, and add the beef to the pot. Add the Corn Starch, and stir the pot thoroughly (final stirring should be for approx. 3-5 minutes-with a steady, slow stirring motion). Let the crock pot cook for 4-6 hours, stirring about every hour or so. If it is going to sit longer than 6 hours, turn the pot down to low after 6 hours cooking time.
