My Favorite Recipes

Hi. Here are some of my favorite recipes.
Most of them will feed at least six people.
You will probably want to adjust
them for yourself. Happy Eating.
I will be adding to this as I can
until they're all here.

Creamy Cole Slaw
1 medium cabbage shredded
16 oz.sour cream
6 Tbls. apple cider vinegar
8 Tbls. sugar
1/2 tsp. salt
pinch of white pepper
In a bowl mix the sour cream, vinegar,
sugar, salt, and pepper until smooth.
Pour over slaw and mix.
Make sure there is enough dressing
so the cabbage isn't dry.
Make lots.I have yet to find
anyone who doesn't like this.

Sliced Tomatoes
slice 4 or 5 tomatoes
put in single layer on a plate
spread chopped onion and fresh 
chopped parsley on top
drizzle olive oil over all
sprinkle taragon vinegar over all
let sit in refrigerator for 1/2 hour
serve

Potato Salad
5 lbs. potatoes washed & cut up 
with skins left on
boil til done in salted water
drain
add 8 chopped hard boiled eggs
2-3 Tbls. prepared mustard
1/2 jar dill pickle relish
season to taste with the following:
chopped fresh dill
dill seed
celery seed
fresh chopped basil
fresh chopped tyme
1 medium onion chopped
salt
pepper
mix together with mayonaise

Hot Bacon Dressing
5 slices bacon
2 Tbls flour
1 1/2 Tbls sugar
dash of salt & pepper
2 1/2 Tbls vinegar
1 egg beaten
1 1/4 cup water
fry bacon in skillet
remove bacon and drain
mix flour, vinegar, and 1/2 the water
and add to bacon grease stirring constantly
over medium heat slowly add the 
remaining ingredients and keep stirring
constantly til mixture boils 
pour over broken up lettuce
sprinkle crumbled bacon on top 
serve immediately

Corn Bread
1 cup sifted all purpose flour
1/4 cup sugar
4 tsps baking powder
3/4 tsps salt
1 cup yellow corn meal
2 eggs
1 cup milk
1/4 cup shortening
sift flour with sugar, baking powder, and salt
stir in corn meal
add eggs, milk, and shortening
beat til just smooth
pour into greased 9 inch cast iron skillet
bake at 425 degrees for 20 to 
25 minutes

Corn Pudding
I usually only make this at Thanksgiving and
Christmas. I prefer this recipe because it is
more moist than most.

6 ears of corn or 1 can creamed corn 1 Tbls sugar 1 Tbls corn starch 1 tsp salt 3 eggs separated, beat whites stiff 4 Tbls butter melted 1 cup milk mix beaten egg yokes, milk, melted butter salt, sugar, and corn starch together fold in egg whites bake in a buttered 1 1/2 quart baking dish in a pan of hot water at 350 degrees for 1/2 hour or til a knife comes out clean

Aunt Ruth's Waffles
We had these for Sunday supper when I was growing 
up with either maple syrup or creamed chipped
beef or turkey around Thanksgiving and
Christmas.

3 1/2 Tbls sugar 2 cups flour 4 tsps baking powder 1 tsp salt 3 eggs separated, beat whites stiff 1 1/4 cupmilk 1/3 cup melted shortening sift dry ingredients together add slightly beatten egg yokes and milk beat thoroughly add shortening fold in stiffly beaten egg whites bake in Waffle iron makes 6

White Sauce
This a medium white sauce and I usually 
make six to eight recipes.
2 Tbls butter
2 Tbls all-purpose flour
1/4 tsp salt
1 cup milk
melt butter in pan over low heat
blend in flour, salt, and 
a dash of white pepper
add milk all at once
turn heat to high
stir constantly until it starts to
thicken and bubble
add chopped chip beef or chopped turkey
