Falafel Wraps
Falafel mix, made according to package directions,
usually this just means adding water, I use
boiling water which lets the mix absorb faster
1/2 cup chopped parsley
chopped fresh Basil leaves
1-2 T Olive oil
Wraps, use your favorite kind, flour tortillas, sun-dried tomato and basil, whole wheat,
spinach, there are lots of different types available
Cucumber, peeled seeded and thinly sliced
Diced fresh tomato or cherry tomato halves
Lettuce, bell pepper slices, sprouts or other additions of your choice
Tahini Sauce:
Mix together 1/2 cup sesame tahini
1/4 cup lemon juice
1/4 cup water
2 cloves of minced or crushed garlic
1/2 tsp. of salt
Mix up the falafel, and add half of the parsley if desired. Form it into small patties. Add 1 T of olive oil to a non-stick pan and cook the falafel over medium heat until nicely browned. Break up the patties. This makes them fit into the wrap better.
Lay the wrap out on a flat surface. Spread half of the wrap with tahini sauce. Place crumbled falafel on the wrap. Top with cucumber, tomatoes, basil leaves, parsley and other toppings of your choice. Roll up the package tightly. Return the entire wrap to the pan and toast it briefly, turning once or twice and adding a little more olive oil if necessary. Serve immediately.
This is nice with bean or pasta salad.
