Green Bean Salad
About 1/2 pound fresh cleaned green beans, cut into 2" -
3" pieces
Water
One 14oz can of red kidney beans
1/2 cup finely chopped onion
1 clove of finely chopped garlic
about 1/4 cup Olive Oil
2 T Balsamic Vinegar (you may omit this and use all red wine vinegar)
2 T Red Wine Vinegar
1/2 cup chopped fresh parsley
1/2 cup chopped fresh dill weed
1 cucumber, peeled, quartered and sliced
Black Pepper (and salt) to taste.
Boil several quarts of water. When the water comes to a boil, drop in the green beand. and boil for about 6 minutes. The beans should be al dente. Drain them, then rinse them quickly under cold water to stop the cooking process and cool them down.
Mix together onion, garlic, oil, vinegar, herbs, pepper and cucumber together in a large container. Add cooked green beans. Taste for seasoning and adjust to your liking. If it needs more dressing, mix in a little oil or vinegar about a tablespoon at a time. Add oil if the flavor seems too tart, or add vinegar if it needs more tartness.
