Sesame Green Beans
Vegetable oil
1/2 onion, thinly sliced
Green beans, about 1/2 pound, blanched* for 3 minutes
Squash, sliced, optional
1 clove of garlic, minced
Seasonings
Mix together:
1 T Sesame oil
1/4 cup Vegetable broth
2 T Soy Sauce
1 T Rice vinegar (use white or cider vinegar if you do not have rice vinegar)
1/2 t. sugar
1/8 t. red pepper flakes
2 T Sesame Seed
1 t. Cornstarch
Heat a Tablespoon (more or less) of vegetable oil in a large skillet over medium high heat. Sauté the onions until starting to brown slightly, add blanched green beans to skillet and cook for about 3-4 minutes.
Mix the seasonings together well and add to the pan. While stirring, let the beans bubble a few minutes in the liquid until crisp/tender. Sprinkle with more Sesame oil if desired.
Optional ingredients:
Squash, add after the beans and cook everything together
You could add some browned tempeh to this to make it a main dish. Sauté sliced tempeh in oil until browned. Reserve and add back to the pan with the vegetables before serving.

* Blanching: Boil a big pot of water. When the water is boiling, add your vegetables to the pot and cook on high heat for the recommended time. Remove or drain the vegetables and cool them quickly under cold running water.
