My daughter kept on begging me to buy the soft pretzels she sees in the Mall. Sure, they taste great, but they also cost a lot. So I set out to search the Internet for a recipe that I could make at home. I collected about half a dozen or so and read through them very carefully to see what they had in common and what made them different. Then I started to expriement. Here is my final version it makes 8 pretzels:

Soft Pretzels

1 cup water

  • heat in microwave for 1 minute.
1 tsp salt
3 TBSP sugar
1 TBSP dry yeast
1 TBSP oil
  • Place salt, sugar, yeast and oil in foodprocessor and add luke warm water and 1 cup of the flour and process to mix
2½ cups flour
  • Now add another cup flour and mix. Keep on adding flour until they dough doesn't stick to the blade any longer.
  • Remove from food processor bowl and place in a greased bowl and let rise for 1 hour in a warm place. (I usually put it in the microwave for 11 seconds and leave it in there)
Shaping Pretzels
  • PREHEAT OVEN TO 425°F
  • Put oven tray in top most rung!!! (This way the pretzel will brown nicely).
  • After dough has risen, punch down and knead to get all the air out.
  • Divide dough into 8 pieces and place on a floured board or dough will stick where it is.
  • Roll into a ball and then into a long skinny rope and shape into a pretzel.
  • Place shaped pretzel on a floured board.
  • IN THE MEAN TIME HEEAT THE WATER AND BAKING SODA
4 cups water
2 TBSP baking soda
  • Bring water and baking soda to a boil and reduce to simmer.
  • Place each pretzel with a slotted spoon in the water/baking soda mixture. Flip pretzel as soon as it comes to the surface and place on a board to dry a little.
  • Transfer pretzel to baking tray.
1 egg beaten
  • Brush each pretzel with egg wash.
  • Sprinkle with coarse salt if desired (I found that if the pretzels are not eaten immediately and put in a plastic bag, the salt will melt and disappear. The pretzel will turn out to be very salty this way).
  • Place in preheated 425°F oven on top most level for 12 minutes.
  • If you store your pretzels in a plastic bag, use the toaster oven to perk them back up and they will taste fresh out of the oven.
