Ingredients:
Dissolve 1 teaspoon sugar in 1 cup lukewarm water in a large bowl. Sprinkle the yeast on top. Let stand about ten minutes, until the yeast rises to the top. Stir until blended. Stir in the beer and the remainder of the water, along withall the other ingredients besides the flour. Stir in most of the flour, one cup at a time. Keep mixing in flour until the dough is firm but moist. Scrape the dough out onto a well-floured surface, and cover with more flour. Knead until it is mooth, springy, and firm. Put it back in the bowl and cover it with a moist cloth. Let rise in a warm place for an hour or two, until it has roughly doubled in size. Punch the dough down to get rid of air bubbles, and divide it into 3 or four parts. Knead each part briefly on the floured surface and form into loaves. put the loaves into greased pans and let rise again until they are rounded over the pan tops, a little over an hour. Bake at 400º F for about 30 minutes. when the loaves are brown, remove them from the pans and put them on racks to cool. It freezes well. |
