Cranberry Oatmeal Orange Muffins

Ingredients
1 1/4 cup all purpose flour
1/4 cup whole wheat flour
1/2 cup quick cooking oats
1/2 tsp baking soda
3 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 cup brown sugar
1 egg
1/4 cup milk
1/4 cup plain yogourt
3 Tbsp vegetable oil
1/2 cup orange juice
1 cup cranberries, fresh or frozen
1/4 cup white sugar

Ingredients for Optional Streusel Topping
1/3 cup whole wheat flour
2 Tbsp sugar
1 Tbsp butter
1/2 tsp cinnamon

Instructions

Mix cranberries and white sugar together in a bowl and let sit for at least 10 minutes.

Combine all purpose flour, whole wheat flour, oats, sugar, baking powder, soda, salt, and cinnamon in a bowl.

Mix yogourt and milk together. Add yogourt/milk to bowl. Then add egg and oil and combine all together.

Now add the orange juice and cranberries. Mix gently, as to not squash the cranberries too much. Pour batter into a greased standard 12 cup muffin pan.

For streusel : Put all ingredient in small bowl and cut butter in with a fork until mixture is grainy. Sprinkle streusel on top of muffins before baking. Makes a nice, sweet crumbly topping.

Preheat oven to 400 degrees F and bake for 20 to 25 minutes, until muffins are golden brown.
