PUMPKIN CUSTARD (Flan de Calabaza)

1 cup boiled pumpkin (6 pieces) 1 Tbsp. vanilla
2 Tbsp. margarine or butter 1 can condensed milk
3 eggs1/2 cup sugar
1/2 Tbsp. salt1/3 cup flour
2 Tbsp. sugar - for caramel

Cook the pumpkin with the salt. Mash and measure a cup. Add all the other ingredients as given. Prepare the caramel in a pan with little water by melting the sugar in the stove, moving the pan so the caramel spreads to the sides.

Put the mixture in the pan and cook it in a water bath in the oven for 60 minutes at 350 degree F. When it is done take it out and remove it from the water bath and let it cool. Put in the refrigerator. When ready to serve put it upside down in a plate so that it comes out from the pan. Decorate it with cherries.
