PIÑÓN
3 ripe plantains | 1/4 tsp. oregano |
2 cup oil for deep frying | 1/2 cup tomato sauce |
2 Tbsp. margarine | 1 Tbsp. capers |
2 diced cloves of garlic | 1 lb. ground beef |
1 onion | 1 cup water |
2 diced sweet peppers | 1 can green beans |
2 coriander leaves, crushed | 2 eggs, beaten well with 1/2 tsp. cut salt |
Peel the plantains and salt them lightly. Deep fry in hot fat
until brown. Drain.
In a skillet put the margarine together with the onion and
garlic and green peppers. Cook about 5 minutes, then add
coriander, oregano and tomato sauce. Simmer 10 minutes. Add the
meat, capers, water and the beans. Cook (about 20 minutes).
Butter shallow baking dish and cover with 1/2 of the fried
plantains. Spoon meat on op and then cover with the rest of the
plantains. Pour the beaten eggs over all. Bake in oven at 350
degrees F. For about 20 to 25 minutes or until eggs are set. Serves 4-6.
