   A former dirt-track specialist, Randy Zuidema is now running on pavement in the MAScar North Mini-Cup Series.      Zuidema, 42, of Sussex, N.J. grew up around the Orange County Fair Speedway in Middletown, N.Y. where he watched his father Jack field dirt Modifieds.  From there, Zuidema began racing and won a pair of Sportsman races in 1982 at Orange County.  After a lengthy retirement Zuidema has returned to action, racing this time at Mahoning Valley Speedway capturing the points championship in 1998.    The #18 is a 1996 Townsend Chassis and is owned by friend and teamate John Udes.  The #18 is sponsored by Quality Ambulance out of Victory Gardens, N.J.
