8 cups milk
1/3 cup sugar
variation:
Add 1 cup CHENNA cheese (See Milk Product
Recipes.), chopped cashews or almonds to kheer when finished.
Method:
1. In a large heavy-bottomed pot, combine milk and sugar.
2. Boil steadily until milk reduces to 1/3 it's original amount.
3. Chill and serve.
* Yields 4 cups.
variation method:
1. Break chenna cheese into 1-inch pieces.
2. Stir cheese or nuts into kheer before chilling.

1 cup grated carrots.
1 cup sugar
2 Tablesp. butter
1/2 teasp. cardamon powder
Method:
1. Follow recipe for CARROT HALAVA until step #2. (See Sweet Recipes.)
2. Add 1 cup milk to recipe. Cook otherwise as instructed.
3. In last stages of cooking, milk will thicken around carrots.
4. Spread on a tray to cool.
* Yields 1 cup.

3 Tablesp. white flour
1 cup sugar
pinch of salt
juice and grated rind of 1 large lemon
1 Tablesp. melted butter
1 cup milk
Method:
1. Mix flour, sugar, salt, lemon juice and grated rind.
2. Beat in butter and milk.
3. Pour into 6 stainless steel bowls or custard cups.
4. Set cups in a shallow pan of water.
5. Bake 30 minutes in a moderate oven.
6. Remove. Cool completely.
7. Using a knife, carefully go around inside of lemon cups to release pudding.
8. Turn cups upside down over a plate. Gently shake until pudding slides out.
* Yields 6 cups.

this is an ideal way to use up old, dry bread.

sugar
cinnamon powder
raisins
Method:
1. In a deep baking dish, place a layer of buttered bread slices.
2. Sprinkle bread with sugar, cinnamon and raisins according to taste.
3. Saturate bread with milk.
4. Make another layer of buttered bread slices.
5. Sprinkle with sugar, cinnamon and raisins.
6. Saturate bread with milk.
7. Soak bread 2 hours.
8. Bake pudding in moderate oven 1 hour until slightly brown.

1 cup yogurt
1 cup of tinned sweet condensed milk
1/4 cup raisins
1 teasp. vanilla essence
Method:
1. Beat together all ingredients.
2. Pour batter into a 6-inch, greased baking dish.
3. Bake 45 minutes in a moderate oven until firm.
4. Serve when cool.
* Yields 2 cups.

2 cups apple, banana, or pineapple chunks
2 cups white or fine whole wheat flour
1 cup sugar
milk as needed
Method:
1. Heavily grease a deep baking dish with water.
2. Sift flour and sugar.
3. Sprinkle bottom of baking dish with 1/3 of the flour mixture.
4. Spread 1/2 the fruit evenly over flour. Dot with butter.
5. Sprinkle 1/2 remaining flour over fruit.
6. Sprinkle remaining fruit over flour. Dot with butter.
7. Sprinkle with remaining flour. Dot with butter.
8. Saturate all ingredients with milk.
9. Bake 1 hour in moderate oven.
10. Cool completely.
* Yields 4 cups.

1 cup cold water
6 Tablesp. agar flakes
4 cups non-citrus fruit juice
2 cups mixed fresh fruit pieces
Method:
1. Boil water and agar flakes.
2. Reduce heat.
3. Simmer until all flakes dissolve.
4. Stir constantly.
5. Cool to room temperature.
6. Pour fruit juice into a bowl.
7. Pour agar mixture through a sieve into fruit juice. Stir well.
8. Chill until jell-o is solid. (A couple of hours.)
9. Add fruit chunks after jell-o sets 30 minutes.
* Yields 5 cups.
