You will notice that I refuse to put the exact amount of each ingredient. Because every one's taste is different, you'll simply have to experiment to find out what suits you best. I will give you a rough idea though. For half a chicken, it takes about 1 teaspoon of minced ginger, 2 teaspoon of minced garlic, 1 tablespoon of black bean, 2-3 tablespoon of orange peal, 1 tablespoon of wine, 1 tablespoon of soy sauce, 1 teaspoon of sugar, 1/2 teaspoon of salt, 1 cup of water. Spices can vary, but you must use enough water to cover the chicken. Use medium to high fire to boil, it takes about 20-30 minutes for the chicken to be done. Black bean and orange peal are optional, but the addition of them will add incredible aroma and taste. It's worth the trouble to seek them out. Or else, it will still be a decent dish, just a little ordinary.
