Ingredients

  • 3lb pork pieces.
  • 30 dry red chillies.
  • 12 onions - small to medium.
  • 1-tablespoon cumin seeds.
  • 1 ½ teaspoons turmeric.
  • 3 tablespoons ground coriander.
  • 1 tablespoon peppercorns.
  • 3 tablespoons vinegar.
  • Salt to taste.
  • 4 medium potatoes.

    Method

    1. Mix the pork with the ground chillies and salt. Marinate for about 15 minutes.
    2. Slice 10 onions and cook in a saucepan with the pork and a little water. Cover the pan as this preserves the flavour.
    3. Allow to simmer for about 30 minutes, until the meat is tender. Grind the 2 remaining onions, cumin seeds, turmeric, coriander and pepper, and stir into the meat.
    4. Blend in the vinegar and continue cooking for a further 15 minutes.
    5. Add the boiled potatoes, peeled and cut into cubes. Cook for a few minutes and serve hot.
    6. Garnish with some freshly chopped coriander.
