Ingredients

  • 1 large fish.
  • 8ozs minced onions.
  • 6 dry red chillies.
  • 10-12 cloves garlic.
  • 1 large piece ginger.
  • ½ tablespoon cumin seeds.
  • 3 tablespoons white vinegar.
  • 3 tablespoons ghee.
  • 1 piece cinnamon.
  • Salt to taste.
  • 1 oz sugar.
  • 1 teaspoon garam masala
  • 6 green chillies.

    Method

    1. Cut the fish into small pieces. Rub with salt and leave for 10 minutes, then wash a second time. Chop the onions. Grind the red chillies, garlic, onions, ginger and cumin seeds with a little vinegar to a fine paste.
    2. Melt the ghee in a saucepan and fry the ground spices in the ghee for a few minutes.
    3. Add the cinnamon stick and the fish. Add the salt and fry for 5 minutes on a high flame.
    4. Lower the heat and simmer for 10 minutes.
    5. Stir in the vinegar, sugar, green chillies and garam masala and cook uncovered until the gravy thickens.
    6. Serve immediately.
