Ingredients

1. 1 Chicken (broiler)
2. 3 Level teaspoons salt
3. 1 Sour lime
4. 35 small white chillies and 2 green chillies
5. 4 Peppercorns
6. 25 Cloves of garlic
7. 4 inch piece of ginger
8. Sufficient oil to deep fry the chicken

Method

1. Clean the chicken, slit it a little on the stomach side and remove the insides.

2. Wash the chicken inside and out, apply salt and the sour lime juice and keep aside. The chicken may be cut into pieces if desired.

3. Grind all the chillies, peppercorns, garlic, ginger to a fine paste and apply (inside and outside) to the chicken.

4. Allow to marinate for 7 or 8 hours. Deep fry. Serve hot with salad.
