Chicken, cut into saute pcs
Red chillies
Sliced onions
Sliced shalotts
Garlic, chopped
Grated ginger
Lime leaves
Santan

Cut chicken into 8 pieces.
Heat oil. Fry garlic, ginger, onions until fragrant.
Add pounded mixture I and saute. Then, add pounded mixture II and fry for 3 mins.
Add the chicken and fry until brown.
Add salt, santan, chillies, lime leaves and bring to boil.
Reduce heat and simmer until chicken is tender.
Remove chicken from the sauce and keep hot.
Put sauce in a liquidizer and blend.
Adjust seasoning and put chicken back into the sauce.
Serve in a gratin dish.
