Cut the pork and chicken into stripes of 7 x 4 cm.
Put two pieces on each skewer.
Marinade them for 12 hours.
Barbeque them over charcoal grill.

Serve with the following sauce:

Heat peanut oil in a sautoir.
Saute garlic and shallots.
Add the rest of the ingredients.
Simmer for 20 mins.
Adjust consistency with coconut milk or chicken stock.
