Mix minced beef and mirepoix. Add egg whites and water. Cover and let stand in a cool place for about 1 hour. For better results, add 500 g ice-cubes to the clarification.
Add cold stock and browned onions.
Heat to a boiling point, stirring occasionally.
Simmer slowly for 2 hours.
Strain through a cheese cloth and skim off any fat.
Adjust seasoning.
