This wonderful salad consists of marinated chile anchos and makes a wonderful accompaniment to
many Mexican meals especially with any type of fish.
Ancho Chile Salad with Cheese or Ensalada de Chile Ancho con Queso Fersco - Easy Mexican Recipe For Mexican Food
- 1 head butterhead lettuce
- 125g queso fresco or feta cheese (crumbled)
- 155g chiles anchos (seeded & sliced)
- 3 tbsp red wine vinegar
- 2 tbsp oil
- 1/4 tsp salt
- 1/8 tsp pepper

How to Make Ancho Chile Salad with Cheese or Ensalada de Chile Ancho con Queso Fersco:
- Rinse and dry the seeded and sliced chiles
- In a bowl, combine the chiles, vinegar, oil, salt & pepper
- Stir and let stand for at least 24 hours
- Stir in the mixture, taste and adjust to your palate
- Arrange leaves of butterhead lettuce on salad plates
- Spoon mixture on top
- Sprinkle with crumbled queso fresco or feta cheese
HINT: If prefer, you may garnish with thin strips of jicama or yam beans.
