Gluten -> Seitan Broths
For all broths (listed below), boil ingredients for 5
minutes before adding gluten recipes for 2 cups raw gluten. Bring to a boil,
and simmer for 1 1/2 hours. Let sit in pot overnight (to absorb flavors).
Can be put into serving size dishes and frozen.

Gluten-like Fish
make basic gluten using only unbleached white flour. use method 2 and slice
gluten 1/4 inch to 1/2 thick
4 cups water

boil in broth for 30 minutes. let soak overnight in broth. drain well. dip each
piece in a mixture of
2 cups milk

roll in a mixture of
2 cups corn flour, corn meal, cream of wheat (Farina), malto-meal or powdered
cracker crumbs
1/4 teaspoon cayenne pepper, salt
deep fry 350F until light brown
